+ Fennville Tuesday in the Park Concert Seeries 2013

Starting at 7 PM,  June 11, Fennville will sponsore music in Memorial Park they will also have a 50/50 drawing with tickets costing $1 each or 6 for $5 dollars, this drawing will benefit the Greater Fennville Chamber of Commerce Scholarship Fund... In case of inclement weather, the concerts will be held at the Fennvill District Library on Main street.

June 25th:  Edye Evans Hyde - Jazz
July 9:  Madcat Midnight Blues Journey - Blues
July 23: Cabildo  : Latin

Roasted Potatoes and Asparagus

Preheat Oven to 350 degrees

1 pound Michigan Asparagus

Cut rinsed Fresh Asparagus in 1 inch pieces.

1/2 cup Italian Dressing

1/3 cup Dijon Mustard

Combine dressing and mustard until well blended .

2 pounds Small Red Potatoes (rinsed and cut into quarters about 1 inch pieces)

Toss Potatoes in 1/4 cup blended dressing.

Spray non stick sided 15x10x1 baking sheet.

Spread Potatoes tossed with dressing on sheet in single layer.

Bake 20-25 minutes.

Remove from oven mix in Michigan Fresh Asparagus.

Bake additional 10-15 minutes.

2 cups Grape or Cherry Tomatoes (cut in half)

1/3 cup Green Onion (sliced)

Remaining Blended Dressing.

Put Potatoes and Michigan Roasted Asparagus in large bowl.

Mix in Tomatoes, Onion & Dressing

Serve warm or at room temperature.

Makes 6 Servings

The Fennville Station is once again open on Wednesdays starting May 1, 2013, and they are planing on having live music from 5-8pm every Wednesday.  We went and had a great time; Bob and Gary were playing and were great . I had Eggplant Parmesan, with a marinara sauce and Parmesan cheese and a double helping of summer squashes while my friend had the Lasagna with sausage... and we started our night with Han's the Chef  table side Caesar salad.  We both are going to have a wonderful lunch today with all the left overs....

If you have not experienced  coming to the Fennville Station, I would put the experience on your list. Wednesdays are really a lot of fun and the music is great.....You will be glad you came.
