Apple Puff Pancakes
3/4 cup milk
3/4 cup all-purpose flour
1/2 tsp salt
1/4 cup butter
2 medium apple, thinly sliced
1/4 cup sugar
1/4 tsp ground cinnamon
Preheat oven to 400 degrees.
Place two 8- or 9-inch pans in oven with butter divided between the pans. Take out when butter has melted and coat bottom and sides of pans with pastry brush. Also add a spray of Pam.
In a smaller mixing bowl, beat eggs, then add flour and beat, then milk and salt, beating for 1 minute on medium speed.
Mix sugar and cinnamon together.
Saute apples in 2 Tablespoons butter and a little of the sugar-cinnamon mixture until semi-firm.
Arrange apples in the two pans and top with batter.
Sprinkle cinnamon-sugar mix on top.
Bake uncovered until puffed and golden brown, or about 20-25 minutes.
