Roasted Asparagus Strawberry Walnut Salad 1 lb Fresh Michigan Asparagus (cut in 1 inch pieces) 1 T Olive Oil Preheat oven to 400 degrees and line a broiler pan with foil. In a large bowl, toss Asparagus in Olive Oil and arrage on pan in a single layer. Roast until crisp tender, about 15 minutes. Remove from oven and cool to room temperature. 1 10 oz pkg fresh spinach (torn into bite size pieces) 1 cup Fresh Earl's Strawberries (washed, hulled and sliced) 1/2 cup Walnuts (chopped) Mix spinach, Strawberries and walnuts. Add cooled roasted asparagus. Dressing: 1/2 cup vegetable oil 1/4 cup raspberry vinegar 1 t. sugar 1/2 t. salt Wisk together. Drizzle Dressing over Salad. Serve and Enjoy! | ||
